Mint Chip Smoothie

Smoothies…so easy yet so complex! How much liquid do I use? Should I add water? Coconut water? Almond milk? Coconut milk? Will it taste fruity? Will it be too sweet? Will it be sweet enough? Will I taste the greens? You see what I mean?! I swear I nixed the whole smoothie idea for the longest time because I was sure it was going to turn out to be a massive fail. But then I experimented and have found that if you keep the base relatively the same, you can add and subtract things to your hearts content! There are so many smoothie recipes out there that have a million different superfoods added in and if you already have them in your kitchen, by all means, put them in! But know this, a smoothie

Super Green Egg Cups and My Elimination Project

Look at these cute little egg cups! I’ve tried making them so many times and I always get frustrated because getting them out of the tins intact is pretty much damn near impossible. So, I just sprayed the hell out of these and bam, nailed it! I decided to give egg cups a go again because I’m attempting to get more disciplined with my eating habits and with that comes PLANNING. Having these at the ready gives me a great source of fuel without sacrificing my energy levels and waistline. As much as I love popping a piece of dark chocolate when my energy levels dip or I don’t have time to make anything, that habit was becoming a capital “P” Problem. After a week in Disney with my family I decide

Spicy Honey-Brushed Chicken – Aka Magic Chicken

I love this recipe. You dump everything into a ziploc bag, shake it up and when you are ready to grill, dump it out! I mean, can you get any easier than that?! I’ve made this recipe with both chicken thighs and chicken breasts and I think thighs are better. I sometimes even forget to do the honey glaze at the end and it’s STILL good. The original recipe calls for broiling this in the oven but that resulted in a smokey mess. The grill is perfect. I have no idea why we call this Magic Chicken. A friend of mine passed this recipe along and that’s what they called it – I agree, it’s magical! Spicy Honey-Brushed Chicken Thighs Ingredients: 2 teaspoons garlic powder 2 teaspoons chili powder 1 teas

Healthy Brownie Muffins

These are the easiest muffins you will ever make and the fact that they are healthy and delicious is certainly a bonus. Healthy chocolate muffins?! How can that be you ask?! Chickpeas. Today Matson and I made another batch of these brownie muffins to add to our lunch box stash. As we all know, packing lunches for kids can be a challenge. My kids are not big sandwich fans so I had to think of things to pack that they WOULD eat and that were also good for them. Muffins are easy to throw in and can be healthy and made ahead. This is just one of the many muffin recipes that’s in regular rotation in our house. After they cool I throw them in a Ziploc bag and into the freezer they go. I take a cou

Spicy Sweet Potatoes

I am convinced these Spicy Sweet Potatoes adapted from Juli Bauer’s Paleo Cookbook will make a sweet potato lover out of anyone. I will be the first to admit that I wasn’t always all aboard the sweet potato train but now I am a convert. These were a little too spicy for my kids (that’s ok, more for me) but they are perfect on their own as a side dish or, my personal favorite, with eggs and greens for a delicious breakfast bowl. Mmm… Go whip yourself up a batch of these – you won’t be sorry. Spicy Sweet Potatoes Ingredients: 2-3 medium sweet potatoes 2 teaspoons sea salt 1 teaspoon garlic powder 1 teaspoon paprika 1/4 teaspoon chili powder 1/4 teaspoon ground cumin 1/4 teaspoon cayenne pepper

Tips for Dining Out

Hurray for the weekend! I don’t know about you but one of the things I look forward to most of all on the weekends is taking a bit of a break from the monotony of cooking. For many years I would nail my workouts and eat pretty clean during the week but when the weekend arrived, it was a free-for-all. Bloody Mary and mimosa-filled brunches, tailgates, cocktails, birthdays, weddings, bar-food, Sunday football snacks…all of these social situations wound up putting me right back to square one every Monday. And then I’d do it all over again the next week. It’s really no fun to work your tail off and not see results from it! Dining out presents a host of temptations and with one out of every five

No-Chop Chili

I see snow and you know what that means?! Who am I kidding, the day after Labor Day I’m on the chili wagon but snowy weather is a great excuse to get some cooking on the stove. I’ve been making this chili FOREVER. It definitely ranks up there as one of the few recipes I ever made living in NYC as a college graduate: 1) because no one cooks when they live in the city and 2) because you will never find an easier recipe. This will take you less than 10 minutes to put together and there is no chopping involved. Quick + easy + delicious = winner. Ingredients: 1 lb ground beef, turkey or bison 2 cups water 1 1/2 cups frozen whole kernel corn 1 cup bottled salsa, Trader Joe’s Double Roasted salsa w

Crockpot Salsa Verde Chicken

I’ve been meaning to post this recipe for quite some time because, well, it’s just THAT good and everyone should have this in their arsenal for a great, healthy dinner. Incredibly versatile and satisfying, this recipe WILL NOT disappoint. This is a Skinnytaste recipe that I have made no less than 100 times. I don’t even measure the ingredients anymore because honestly, it’s fool-proof – one of the many bonuses of crockpot recipes. Make it on Sunday and eat it for the week, throw the ingredients in the crockpot at 5pm and dinner is ready by 7pm. You can’t go wrong. Serve over salad, in a corn tortilla, over cauliflower rice – the possibilities are limitless! Ingredients: 1 1/2 lbs raw skinles

Perfect Roast Chicken

A roast chicken not only tastes amazing but it makes your house smell heavenly. I think I roast chickens mostly for the mouth-wateringly delicious odors that fill the kitchen actually. A friend made a roast chicken for me after the birth of my second and I’ve since made it for many of my friends. This recipe is from Ina Garten, who in my opinion can do no wrong. There is a reason it is called PERFECT Roast Chicken because rest assured, this recipe will NOT disappoint! Bonus? Leftovers for lunches and lots to repurpose for soups and salads – one of the many meal prep tips and tricks I share in my monthly challenge groups! Perfect Roast Chicken Ingredients: 1 (5-6lb) roasting chicken Kosher s

Kid-Friendly Salmon

I hear it all the time, “Oh, my kids LOVE salmon, we have it every week!” Can I tell you how many times I tried to get MINE to eat it? Fail every time. The closest we get to fish in this house is a fish stick and sometimes I’m a little skeptical if there is even fish in those things – to me it just looks like another breaded something to add to the weekly rotation! Seriously though, fish is so good for you and I really wanted to find a recipe that they would eat – that we could ALL eat. Jackpot! What’s crazy is I have had this salmon marinade recipe written on a notecard for years. YEARS. I kind of forgot about it for a while and pulled it back out recently and thought it was worth a shot. Y

Having a Diet vs. Being on a Diet

One of the questions I am asked most often is, “can you have THIS on your diet?” This topic is near and dear to my heart because I think people are often confused by it. People tend to categorize food as “good” or “bad” with no in-between and with an all-or-nothing approach that leads to the inevitable sabotage of one’s own health goals. I am sure you have heard that 20% of our physical results come from exercise and 80% come from our food so nailing our nutrition is pretty important! When you are ON a diet we tend to think of restricting our food intake, going fat-free, carb-free, gluten-free, sugar-free, dairy-free and whatever other limiting tactic is necessary in order to achieve our des
