Spicy Honey-Brushed Chicken – Aka Magic Chicken
I love this recipe. You dump everything into a ziploc bag, shake it up and when you are ready to grill, dump it out! I mean, can you get any easier than that?! I’ve made this recipe with both chicken thighs and chicken breasts and I think thighs are better. I sometimes even forget to do the honey glaze at the end and it’s STILL good. The original recipe calls for broiling this in the oven but that resulted in a smokey mess. The grill is perfect. I have no idea why we call this Magic Chicken. A friend of mine passed this recipe along and that’s what they called it – I agree, it’s magical!
Spicy Honey-Brushed Chicken Thighs
Ingredients:
2 teaspoons garlic powder
2 teaspoons chili powder
1 teaspoon salt
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon ground red pepper
8 skinless, boneless chicken thighs
6 tablespoons honey
2 teaspoons apple cider vinegar
Instructions:
Combine first 6 ingredients in a ziploc bag. Add chicken to bag and toss to coat. Store in fridge until you are ready to grill.
Preheat grill and add chicken when heated. Combine honey and vinegar in a small bowl, stirring well. Once the chicken is cooked through, brush 1/4 cup honey mixture on chicken and let cook another minute on that side. Flip the chicken and do the same on the other side. DONE!
Serve with vegetable of choice and you have a nice, clean dinner! Make enough for leftovers – I swear it tastes even better the next day!
