Pork Fried Cauliflower Rice


This recipe is a winner all around. Simple ingredients, almost zero prep (unless you call whisking 3 eggs prep), and it all cooks in one pan. And who doesn't like fried rice?! This is a totally cleaned up version but believe me when I say, you can hardly tell the difference and this is loaded with veggies. I actually managed to get my pickiest little to eat this, though I did fib and tell him it was rice and not diced vegetables. The key to this one is the Riced Vegetable Medley from Trader Joe's. In addition to cauliflower it includes broccoli, carrots, green onion and yellow onion. I scoped Stop & Shop for something similar but the most exotic they had was non-organic riced cauliflower and sweet potato mix.

This recipe is definitely moving into regular rotation and the ingredients are something I will be sure to have on hand for that quick and easy dinner that's often needed. This is also a great meal to satisfy that need for take-out and a MUCH healthier version!

Pork Fried Cauliflower Rice

Ingredients

1 tablespoon extra virgin olive oil

1/2 yellow onion chopped

1 pound ground pork

2 teaspoons salt

1 1/2 bags of Trader Joe's Riced Vegetable Medley

4 tablespoons toasted sesame oil

2 tablespoons coconut aminos

2 tablespoons low-sodium tamari

3 eggs beaten

Green onions, sliced (optional topping)

Red pepper flakes (optional topping)

Instructions

Add olive oil to a large cast iron skillet and heat over medium heat. When the oil is hot, add the ground pork and 1 teaspoon of the salt to the pan and brown, breaking up with a wooden spoon.

Once the pork is cooked through, add the riced vegetables, the toasted sesame oil, coconut aminos, tamari, and remaining teaspoon of salt. Stir to combine, cooking until the vegetables are soft.

Once the vegetables have softened push them to the side to form a well in the middle of the pan and pour in the beaten eggs. Leave the egg until it starts to cook through. Once it is fully cooked, stir them into the rest of the dish to thoroughly combine.

I served mine topped with sliced green onions and a sprinkle of red pepper flakes!
