Pork Fried Cauliflower Rice

This recipe is a winner all around. Simple ingredients, almost zero prep (unless you call whisking 3 eggs prep), and it all cooks in one pan. And who doesn't like fried rice?! This is a totally cleaned up version but believe me when I say, you can hardly tell the difference and this is loaded with veggies. I actually managed to get my pickiest little to eat this, though I did fib and tell him it was rice and not diced vegetables. The key to this one is the Riced Vegetable Medley from Trader Joe's. In addition to cauliflower it includes broccoli, carrots, green onion and yellow onion. I scoped Stop & Shop for something similar but the most exotic they had was non-organic riced cauliflower and
