Chimichurri Sauce


There’s no question that sauces make an otherwise boring dinner THAT much better. Tonight’s menu is easy grilled chicken with roasted broccoli - doesn’t exactly sound exciting, does it? Soooo, I whipped up some chimichurri to go with it - not only does it taste delicious, it makes a meal look that much prettier! And my kids love a sauce for dipping. I roasted up a spaghetti squash for lunch and poured a little of this over it, topped it with feta...so good! Here’s a rough recipe for you - as long as you have fresh herbs, olive oil and red wine vinegar, you really can’t mess this one up.

Chimichurri Sauce

Ingredients

1 giant handful cilantro

1 giant handful parsley

1/2 cup extra virgin olive oil

1/3 cup red wine vinegar

2-3 garlic cloves

Sprinkle of crushed red pepper flakes

Dash of cumin

Pink Himalayan salt to taste

Throw it all in a blender and BOOM!💥
