Bruschetta Meatballs


This is the second recipe I ever posted over on my old blog www.thefoodfitlife.com a few years back and I still love it. It’s fast, it’s easy and it only requires two ingredients -- can you GET any better than that?! Quite often my weeknights are spent running around to this activity or that and having to come home and throw together a labor intensive dinner can seem like altogether waaay too much work and require energy I simply don't have. Instead of whipping out a box of mac & cheese, this is a quick, clean dinner that everyone will love.

Trader Joe’s Bruschetta Meatballs

Ingredients:

1 jar of Trader Joe’s Bruschetta

1 lb ground turkey, beef or bison

Instructions:

Preheat oven to 400 F. Line a baking sheet with parchment paper to make clean up easy. Dump both ingredients into a bowl and mix together. Form into meatballs and place on baking sheet. Cook 20 minutes, flipping the meatballs halfway through. At the 10-minute mark the meatballs may look pretty watery but by 20 minutes they are perfectly cooked.

I serve it over zucchini noodles (zoodles!) or over spaghetti squash for the adults in the house and with pasta for the kiddos. One meal for everyone!
