Shrimp with Tomatoes and Feta
Have you ever been told that you should have a couple of dishes in your arsenal that you can pull-out at anytime and make without a recipe? Well this is most definitely one of mine. Shrimp with tomatoes and feta. I keep a bag of frozen shrimp in my freezer so if ever a night rolls around where I have nothing planned for dinner, I can whip this up in about 20 minutes without having to visit the grocery store. I can’t begin to count how many times I have made this recipe but it falls into the dinner rotation almost weekly. It’s a great one-pot meal that works well for a crowd and is equally enjoyable with a glass of wine curled up on your couch. It’s quick, it’s healthy and it makes for GREAT lunch leftovers too!
Shrimp with Tomatoes and Feta
Ingredients:
2 TBL olive oil
3/4 – 1 lb shrimp (peeled)
1 onion – diced
28oz can diced tomatoes & juices
4oz feta cheese, cubed
Oregano
Salt
Parsley, chopped
Instructions:
Add olive oil to a large fry pan over medium heat.
Brown the onion.
Add the tomatoes, salt, oregano and parsley to taste.
Let simmer until the liquid starts to cook off, about 10-15 minutes.
Add shrimp and cook for another 5 minutes or until cooked through.
Add the cubed feta cheese.
When serving top with more parsley.
This dish is great served with hard, crusty bread or over brown rice. I also like it just plain!
