No-Chop Chili
I see snow and you know what that means?! Who am I kidding, the day after Labor Day I’m on the chili wagon but snowy weather is a great excuse to get some cooking on the stove. I’ve been making this chili FOREVER. It definitely ranks up there as one of the few recipes I ever made living in NYC as a college graduate: 1) because no one cooks when they live in the city and 2) because you will never find an easier recipe. This will take you less than 10 minutes to put together and there is no chopping involved. Quick + easy + delicious = winner.
Ingredients:
1 lb ground beef, turkey or bison
2 cups water
1 1/2 cups frozen whole kernel corn
1 cup bottled salsa, Trader Joe’s Double Roasted salsa works well for this
2 tablespoons chili powder
2 1/2 teaspoons ground cumin
1 1/2 teaspoons dried oregano
1/4 teaspoon salt
1 (14oz) can diced tomatoes
1 (15oz) can kidney beans, drained and rinsed
Instructions:
Cook meat in a large dutch oven.
Stir-in water and remaining ingredients and bring to a boil.
Reduce heat and simmer low for 25 minutes, stirring occasionally.
I top this with sour cream, scallions, avocado and Cholula…and sometimes a little cheese.
