Family Taco Night

My kids are now five and seven and let me just say, it feels like it has been a looooong road to getting us all on the same page with dinner. Dinner hour differences aside, the fact that no one eats the same thing has been the hardest part of it all. I have one kid that will at least try everything and lately she will honestly eat everything (fresh jalepeno’s included!) and then, on the other end of the spectrum, I have the kid that will literally eat nothing and who I refuse to cater to. I am not a short-order cook and more often than not, he takes one look at dinner and says he isn’t hungry and goes straight through till breakfast the next day not eating. Talk about stubborn! I dread the teenage years with this fierce and determined little man…

Anyway, we had tacos the other night and while this isn’t the first attempt at family taco dinner together, this IS the first time everyone ate it which is a huge win! I’m already a fan of tacos and don’t need another excuse to add this to the weekly roundup but hey, this is BIG! Now, the whole purpose of this post is to share with you my favorite taco seasoning. Seriously, have you ever looked at the back of a seasoning pack and read the ingredients? Even my beloved Trader Joe’s mix has added sugar – SO UNNECESSARY! This spice mix is FANTASTIC and it makes a 1/2 cup which should last you awhile. Just mix it in a mason jar so that it’s sealed tight and pull it out when you need it (which is weekly here)!

Taco Seasoning

Ingredients:

2 1/2 tablespoons chili powder

1 1/2 tablespoons sea salt

1 1/2 tablespoons ground cumin

1 tablespoon dried oregano

2 teaspoons onion powder

2 teaspoons ground coriander

2 teaspoons paprika

1 to 3 teaspoons cayenne pepper (I opt for about 1 1/2 because the kids eat it too)

1/4 teaspoon cracked black pepper

* Recipe adapted from Against All Grain. I promise, you will be converted for life!

Enjoy!
